We are upgrading our Celestia Mainnet celestia-app infrastructure to v8.0.8.

This release bumps the core dependency to v0.39.30 and adds gRPC interceptors to the app.

During the maintenance window, users may experience intermittent disruptions to RPC availability as nodes are rotated through the upgrade process.

RPC Changes: No user-facing RPC changes in this release.
